Ingredients
  

  • 1 cup cottage cheese (about 8 oz)
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • pinch red pepper flakes (optional)
  • 2 tbsp grated Parmesan (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.
  • Add the cottage cheese, eggs, garlic powder, Italian seasoning, salt, and optional red pepper flakes or Parmesan to a blender. Blend for 30–45 seconds until completely smooth.
  • Pour the batter onto the prepared baking sheet and spread it into an even rectangle about 1/4-inch thick.
  • Bake for 35–40 minutes, or until the top is fully set and the edges are lightly golden brown.
  • Let the flatbread cool on the pan for about 10 minutes, then carefully peel it off the parchment. Use as a wrap, pizza crust, sandwich, or slice into pieces for serving.

Notes

Store the cooled flatbread in an airtight container in the refrigerator for up to 3 days. Reheat in a dry skillet or toaster oven until warmed through. Freeze individual pieces with parchment paper between each layer for up to 1 month.
