Ingredients
  

  • 2 large ripe bananas, mashed
  • 1/2 cup almond butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • optional add-ins: chocolate chips, walnuts, raisins, or hemp seeds

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a mini muffin tin or line with paper liners.
  • Mash the ripe bananas in a large bowl until smooth with no large lumps.
  • Add almond butter, maple syrup, and vanilla extract. Whisk until fully combined.
  • In another bowl, whisk oat flour, baking powder, cinnamon, and salt.
  • Add dry ingredients to wet and fold gently until just combined. Do not overmix.
  • Fold in any optional add-ins like chocolate chips or nuts.
  • Let the batter rest for 5 minutes to hydrate the oat flour.
  • Scoop batter into muffin tin, filling each cup about 3/4 full.
  • Bake for 18–20 minutes until lightly golden and a toothpick comes out with moist crumbs.
  • Cool in the pan for 5 minutes, then transfer to a rack. Serve warm or store.

Notes

Use very ripe bananas for best sweetness and texture. For a nut-free version, swap almond butter with sunflower seed butter. These bites freeze well for up to 3 months. Add chocolate chips, walnuts, or raisins for variation.
