Ingredients
  

  • 2 slices bread (whole grain, sourdough, or ciabatta)
  • 3 oz sliced deli turkey
  • 1 small ripe avocado
  • 2 slices tomato
  • 1 leaf lettuce (romaine or butter lettuce)
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • salt and black pepper, to taste
  • red onion slices (optional)

Instructions
 

  • Toast the bread slices until golden and crisp.
  • Mash the avocado with lemon juice, salt, and pepper until creamy.
  • Mix mayonnaise and Dijon mustard in a small bowl.
  • Spread the mayo mixture on one slice of bread and the avocado on the other.
  • Layer turkey, tomato slices, lettuce, and red onion if using.
  • Close sandwich, slice diagonally, and serve.

Notes

Assemble just before eating for the best texture. Add lemon juice to the avocado to prevent browning.
