Instructions
Toast the bread slices until golden and crisp.
Mash the avocado with lemon juice, salt, and pepper until creamy.
Mix mayonnaise and Dijon mustard in a small bowl.
Spread the mayo mixture on one slice of bread and the avocado on the other.
Layer turkey, tomato slices, lettuce, and red onion if using.
Close sandwich, slice diagonally, and serve.
Notes
Assemble just before eating for the best texture. Add lemon juice to the avocado to prevent browning.
