Equipment

  • baking sheet
  • parchment paper
  • mixing bowl
  • cheese grater

Ingredients

  • 1 lb pork breakfast sausage (raw)
  • 3 cups sharp cheddar cheese, freshly shredded
  • 2 cups Bisquick baking mix
  • 1 tbsp warm water (optional, if needed)

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • In a large bowl, mix sausage and shredded cheddar cheese until cheese is evenly distributed.
  • Add Bisquick gradually, kneading it into the sausage. Mix for several minutes until the sausage fat hydrates the mix.
  • If mixture remains too dry to hold together, add 1 tablespoon warm water and continue mixing.
  • Roll dough into walnut-sized balls (about 1–1.5 inches) and place on baking sheet.
  • Bake for 20–25 minutes until firm and golden brown.

Notes

Keep mixing even if the dough looks dry—the sausage fat will hydrate the Bisquick as you work it. Roll the balls gently without packing too tightly for the best texture. Add warm water only if absolutely necessary after several minutes of mixing. Always grate your cheese from a block for proper binding. Reheat leftovers in the air fryer at 350°F for 3 minutes for a crispy exterior.
