- 1.5 lb ground beef
- 1 medium onion, diced
- 1 packet taco seasoning
- 1 can red enchilada sauce (15 oz)
- 1 can corn, drained
- 1 can black beans, drained
- 2 cups shredded cheese, divided
- 1 box cornbread mix (8.5 oz)
Brown beef with onion and seasoning.
Transfer to slow cooker and add sauce, corn, beans, and cheese.
Prepare cornbread batter.
Pour batter over meat mixture without stirring.
Cook on High 2–3 hours until set.
Top with remaining cheese before serving.
