Ingredients
  

  • 1.5 lb ground beef
  • 1 medium onion, diced
  • 1 packet taco seasoning
  • 1 can red enchilada sauce (15 oz)
  • 1 can corn, drained
  • 1 can black beans, drained
  • 2 cups shredded cheese, divided
  • 1 box cornbread mix (8.5 oz)

Instructions
 

  • Brown beef with onion and seasoning.
  • Transfer to slow cooker and add sauce, corn, beans, and cheese.
  • Prepare cornbread batter.
  • Pour batter over meat mixture without stirring.
  • Cook on High 2–3 hours until set.
  • Top with remaining cheese before serving.
