- 2 lb beef stew meat
- 0.25 cup all-purpose flour
- 1 tsp salt
- 0.5 tsp black pepper
- 4 medium potatoes, chunked
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 medium onion, diced
- 3 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 2 bay leaves
Toss beef with flour, salt, and pepper.
Brown beef in oil, then transfer to slow cooker.
Add vegetables to slow cooker.
Whisk broth, tomato paste, Worcestershire, garlic, thyme, and bay leaves; pour over.
Cook on Low 7–8 hours or High 4–5 hours.
Thicken with cornstarch slurry if desired.
