Ingredients
  

  • 2 lb beef stew meat
  • 0.25 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 medium potatoes, chunked
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 medium onion, diced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 2 bay leaves

Instructions
 

  • Toss beef with flour, salt, and pepper.
  • Brown beef in oil, then transfer to slow cooker.
  • Add vegetables to slow cooker.
  • Whisk broth, tomato paste, Worcestershire, garlic, thyme, and bay leaves; pour over.
  • Cook on Low 7–8 hours or High 4–5 hours.
  • Thicken with cornstarch slurry if desired.
