These Peach Bliss Balls are a naturally sweet snack made with dried peaches, almond flour, desiccated coconut, maple syrup, and vanilla. They're quick to prepare, require no baking, and make the perfect healthy snack or afternoon treat.

Equipment

  • mixing bowl For coating coconut.
  • 2-teaspoon cookie scoop Optional for even-sized bliss balls.
  • airtight container For storage.

Ingredients
  

  • 140 g dried peaches, finely chopped
  • 60 g almond flour
  • 15 g unsweetened desiccated coconut
  • 1 teaspoon vanilla extract
  • 2 teaspoons pure maple syrup
  • 1/4 teaspoon coarse sea salt
  • 1-2 teaspoons water (if needed)
  • 2 tablespoons desiccated coconut (for coating)

Instructions
 

  • Add the dried peaches, almond flour, desiccated coconut, vanilla extract, maple syrup and sea salt to the bowl of a food processor. Process until well combined.
  • Press a small amount of the mixture together between your fingers. If it is too crumbly, add 1 to 2 teaspoons of water and process again until the mixture holds together.
  • Place the extra desiccated coconut into a shallow bowl.
  • Using a 2-teaspoon cookie scoop or spoon, portion the mixture and roll into balls. Roll each bliss ball in the desiccated coconut until evenly coated.
  • Store the Peach Bliss Balls in an airtight container in the refrigerator for up to one week, or freeze for up to three months.

Notes

Use soft dried peaches for the best texture. Add 1–2 teaspoons of water if the mixture is too dry to roll. Almond meal may be substituted for almond flour. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
