Lunchbox Snack Boxes

These lunchbox snack boxes pack turkey-cheese roll-ups, whole grain crackers, fruit, veggies, and hummus into 5 grab-and-go boxes ready in 20 minutes.

Ingredients
  

  • 5 slices deli turkey
  • 5 string cheese sticks or cubed cheddar
  • 1 cup whole wheat crackers about 30 crackers
  • 2 cups seedless grapes or apple slices tossed in lemon juice
  • 1 cup baby carrots or cucumber slices
  • 1/2 cup hummus divided into 5 small containers
  • 5 small treats yogurt-covered pretzels or mini granola bar pieces

Instructions
 

  • Roll the turkey and cheese. Wrap 1 slice of deli turkey around each string cheese stick and set aside; repeat for all 5 boxes.
  • Portion the crackers. Divide 1 cup whole wheat crackers evenly among 5 small containers, about 6 crackers each.
  • Prep the produce. Wash 2 cups grapes and 1 cup baby carrots. If using apple slices instead of grapes, toss them in a splash of lemon juice to keep them from browning.
  • Portion the dip. Spoon 2 tablespoons of hummus into each of 5 small lidded containers.
  • Assemble the boxes. Divide the turkey-cheese roll-ups, crackers, fruit, veggies, and hummus cups evenly among 5 divided lunchboxes or bento containers.
  • Add the treat and store. Tuck a small treat into each box, snap on the lids, and refrigerate for up to 4 days.

Notes

Store assembled lunchbox snack boxes in the fridge for up to 4 days. Keep the hummus cup separate from the crackers until just before eating so nothing turns soggy.
