Ingredients
  

  • 12 Medjool dates, pitted
  • 1 cup walnuts
  • 2 tbsp chia seeds
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1 lemon, zested
  • 1 mandarin orange, zested

Instructions
 

  • Remove all pits and tough stems from the Medjool dates. If the dates feel dry, soak them in warm water for 5 minutes, then drain.
  • Zest one lemon and one mandarin orange, keeping the zests separate. Reserve a portion of each for coating the finished bites.
  • Add the dates, walnuts, chia seeds, ground ginger, cardamom, and most of the citrus zest to a food processor. Pulse until a sticky, uniform dough forms.
  • If the mixture is too dry, add an extra date or a teaspoon of lemon juice. If too sticky, add a tablespoon of rolled oats and pulse again.
  • Refrigerate the mixture for 10 minutes if it feels too soft to handle.
  • Use a small cookie scoop to portion the mixture. Lightly oil your hands and roll each portion into a smooth ball.
  • Roll each finished ball in the reserved lemon and mandarin zest to coat.
  • Store the energy bites in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.

Notes

Use soft Medjool dates for the best texture and always remove pits before blending. If the mixture is too dry, add an extra date or a teaspoon of lemon juice. If too sticky, blend in a tablespoon of rolled oats. Refrigerate the mixture for 10 minutes if needed before rolling. Store refrigerated for up to 1 week or freeze for up to 2 months. For extra protein, add vanilla protein powder and adjust moisture as needed. Walnuts can be replaced with sunflower or pumpkin seeds for a nut-free version.
