Ingredients
  

  • 2 tbsp fresh lemon juice
  • 1 1/2 tsp lemon zest
  • 1 tbsp extra virgin olive oil
  • 1 1/2 tsp salt
  • 1 tbsp honey (optional)
  • 2 cups raw almonds
  • 1 tsp garlic powder (optional)
  • additional lemon zest for garnish (optional)

Instructions
 

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the fresh lemon juice, lemon zest, olive oil, salt, and honey if using until well combined.
  • Add the raw almonds and toss thoroughly until every almond is evenly coated with the lemon mixture.
  • Let the almonds sit in the marinade for 5 to 10 minutes so the flavors can absorb.
  • Spread the almonds in a single layer on the prepared baking sheet, leaving space between them for even roasting.
  • Bake for 20 to 25 minutes, stirring and shaking the pan halfway through cooking.
  • Remove from the oven and immediately sprinkle with additional lemon zest if desired.
  • Allow the almonds to cool completely on the baking sheet until crisp. Transfer to an airtight container and store at room temperature for up to 1 week.

Always use fresh lemon juice and zest for the best flavor. Allow the almonds to marinate for 5 to 10 minutes before baking and cool completely before storing to achieve maximum crunch. Honey is optional and can be replaced with a keto-friendly sweetener. Store in an airtight container at room temperature for up to 1 week.
