Ingredients
  

  • 2 slices sourdough or country bread
  • 0.5 cup kimchi, drained and chopped
  • 0.5 cup sharp cheddar cheese, shredded
  • 0.5 cup mozzarella cheese, shredded
  • 1 tbsp butter or mayonnaise

Instructions
 

  • Chop and drain kimchi.
  • Butter the outside of bread slices.
  • Layer cheese, kimchi, and remaining cheese between bread.
  • Cook in skillet over medium heat until golden on both sides.
  • Slice and serve immediately.
