Ingredients
  

  • 1 cup bulgur wheat or quinoa
  • 2 cups water or vegetable broth
  • 1 can chickpeas (15 oz), drained
  • 1 large cucumber, diced
  • 0.25 cup red onion, diced
  • 1 cup fresh parsley, chopped
  • 0.5 cup fresh mint, chopped
  • 0.5 cup crumbled feta cheese
  • 0.33 cup pistachios, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice

Instructions
 

  • Cook grain and let cool.
  • Chop vegetables and herbs.
  • Combine all ingredients in a bowl.
  • Whisk olive oil and lemon juice.
  • Toss salad and season to taste.
