Ingredients
  

  • 1 cup hummus (plain or roasted red pepper)
  • 2 medium carrots, cut into sticks
  • 2 stalks celery, cut into sticks
  • 1 cup mini cucumbers, sliced
  • 1 cup cherry tomatoes
  • 1 cup bell pepper, sliced into strips
  • 1/2 cup pita chips or whole grain crackers
  • 4 hard-boiled eggs or a handful of almonds (optional)

Instructions
 

  • Wash and cut the carrots and celery into sticks, slice the cucumbers, halve any large cherry tomatoes, and slice the bell pepper into strips.
  • Scoop 2–3 tablespoons of hummus into a small lidded condiment cup or the center compartment of each divided container.
  • Place the carrots, celery, cucumbers, cherry tomatoes, and bell pepper strips around the hummus in each snack box.
  • Add the pita chips or crackers and include a hard-boiled egg or almonds if using for extra protein.
  • Seal the containers and refrigerate for up to 5 days. Enjoy the vegetables dipped into the hummus just before eating.

Notes

Store the hummus in a separate compartment or condiment cup until ready to eat to keep the vegetables crisp. Refrigerate for up to 5 days. Add hard-boiled eggs or almonds for extra protein if desired.
