Ingredients
  

  • 2 cups plain 2% Greek yogurt
  • 1/3 cup vanilla protein powder (whey or plant-based)
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups frozen mixed berries
  • 1 tbsp water
  • 1/2 cup freeze-dried strawberries, lightly crushed
  • 1/4 cup shelled pistachios, roughly chopped

Instructions
 

  • Combine the frozen mixed berries and water in a small saucepan over medium heat. Simmer for 6–8 minutes, mashing the berries with a fork until thick and jammy. Reduce to about 1/2 cup and let cool for 10 minutes.
  • In a medium bowl, whisk together the Greek yogurt, vanilla protein powder, maple syrup, and vanilla extract for about 1 minute until completely smooth with no lumps.
  • Line a 9x13-inch rimmed baking sheet or pan with parchment paper. Spread the yogurt mixture into an even layer about 1/3-inch thick, leaving about 1 inch around the edges.
  • Dollop the cooled berry compote over the yogurt and use a butter knife to gently swirl it through the surface in several S-shaped motions, leaving distinct ribbons visible.
  • Sprinkle the crushed freeze-dried strawberries and chopped pistachios evenly over the surface, pressing them gently into the yogurt.
  • Freeze the bark on a flat surface for at least 4 hours, preferably overnight, until completely solid.
  • Lift the bark out using the parchment paper and break it into approximately 16 pieces. Layer the pieces between parchment paper in an airtight container and return to the freezer immediately.

Notes

Store the bark in an airtight container in the freezer for up to 3 weeks with parchment paper between layers to prevent sticking. Break and portion the bark within about 2 minutes of removing it from the freezer to avoid ice crystals from thawing and refreezing. Do not refrigerate, as the bark will soften and melt.
