Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 cup lentils, rinsed
  • 28 oz crushed tomatoes
  • 6 cups vegetable broth
  • 2 cups cooked rice
  • 2 tsp paprika
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions
 

  • Sauté onions and bell peppers until softened.
  • Add garlic and cook briefly.
  • Add lentils, tomatoes, broth, and spices. Simmer until lentils are tender.
  • Stir in cooked rice and simmer.
  • Adjust seasoning and serve.

Notes

Cook rice separately for best texture. Freeze without rice for best results.
