Ingredients
  

  • 1.5 lbs chicken breast, bite-sized pieces
  • 3 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 2 tsp dried oregano
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cups cooked rice or quinoa
  • 1 large cucumber, diced
  • 2 medium tomatoes, diced
  • 0.5 red onion, sliced
  • 0.5 cup Kalamata olives
  • 0.75 cup feta cheese, crumbled
  • 1 cup tzatziki sauce

Instructions
 

  • Combine chicken with olive oil, lemon juice, oregano, garlic, salt, and pepper. Marinate for 15 minutes.
  • Cook marinated chicken in a hot skillet for 6–8 minutes until golden and cooked through.
  • Prepare cucumbers, tomatoes, and red onion while chicken cooks.
  • Assemble bowls with rice or quinoa, chicken, vegetables, olives, and feta.
  • Top with tzatziki and serve with fresh lemon if desired.

Notes

Store ingredients separately for meal prep. Remove tomato seeds to avoid sogginess. Keeps well refrigerated up to 4 days.
