Equipment

  • Large Mixing Bowl
  • whisk or spoon
  • measuring cups and spoons
  • cutting board
  • chef's knife

Ingredients

  • 2 cups cooked chicken, diced or shredded
  • 1/3 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 celery stalks, diced
  • 1/2 cup red grapes, halved
  • 2 tbsp red onion, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8-12 butter or romaine lettuce leaves

Instructions

  • In a large bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until smooth and creamy.
  • Fold in the cooked chicken, diced celery, halved grapes, and minced red onion until everything is evenly coated with the dressing.
  • Cover and refrigerate the chicken salad for 15–20 minutes to allow the flavors to meld, or serve immediately.
  • Spoon about 1/3 cup of the chicken salad into each lettuce leaf. Serve 2–3 lettuce wraps per person.

Notes

Store the chicken salad filling in an airtight container in the refrigerator for up to 3–4 days. Keep the lettuce leaves separate and assemble just before serving for the best texture. If preferred, replace the mayonnaise with additional Greek yogurt for a lighter version. Not recommended for freezing.
