Ingredients
  

  • 1 lb ground chicken
  • 1 tbsp neutral cooking oil
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 1 cup carrots, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup soy sauce or tamari
  • 1/4 cup water
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • red pepper flakes, to taste (optional)
  • green onions, sliced (for garnish)

Instructions
 

  • Whisk together soy sauce, water, honey, sesame oil, and cornstarch in a small bowl. Set aside.
  • Heat a large wok or skillet over high heat and add oil. Add ground chicken and cook, breaking it apart, until browned and cooked through.
  • Add garlic and ginger and stir fry for about 30 seconds until fragrant.
  • Add carrots and broccoli and cook for 2–3 minutes, stirring frequently.
  • Add bell peppers and snap peas and stir fry for another 2 minutes until just tender.
  • Pour in the prepared sauce and cook for 1–2 minutes until thickened and glossy, coating everything evenly.
  • Remove from heat and garnish with green onions and red pepper flakes if desired. Serve hot.

Notes

Cook over high heat and prep all ingredients before starting for the best stir fry texture. Easily swap vegetables or serve over rice, noodles, or cauliflower rice to fit your dietary needs.
