Freezer Chicken & Wild Rice Soup Kit

A make-ahead freezer bag that turns into a hearty, creamy chicken and wild rice soup with a quick dump into the crockpot.

Ingredients
  

For the Freezer Kit

  • 1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced or 1 tsp garlic powder
  • 1/2 cup uncooked wild rice blend
  • 1 tsp dried thyme
  • 1 bay leaf
  • salt and pepper to taste

Add Fresh on Cooking Day

  • 6 cups chicken broth not frozen in the bag
  • 2 cups fresh baby spinach stirred in at the end
  • 1/2 cup heavy cream optional, stirred in at the end

Instructions
 

  • Label a gallon-size freezer bag with the soup name and today's date.
  • Add the chicken, carrots, celery, onion, garlic, wild rice, thyme, bay leaf, salt, and pepper to the bag.
  • Press out the air, seal, and lay the bag flat in the freezer until solid, then stack it with your other kits. Use within 3 months.
  • Thaw the kit in the refrigerator overnight before cooking day.
  • Dump the thawed contents into the crockpot and add the 6 cups of chicken broth.
  • Cook on LOW for 7 to 8 hours or HIGH for 4 hours, until the chicken and rice are tender.
  • Remove the bay leaf, then stir in the spinach (and cream, if using) during the last 10 minutes.

Notes

Freeze the kit up to 3 months. Keep dairy, raw potatoes, pasta, and delicate greens out of the freezer bag — add those fresh on cooking day.
