Ingredients
  

  • 1 lb ground beef (90/10)
  • 2 cups white rice, uncooked
  • 1 packet taco seasoning
  • 0.5 cup salsa
  • 1 small onion, diced
  • 2 cups shredded lettuce
  • 1 cup cheddar cheese, shredded
  • 1 cup diced tomatoes
  • 0.5 cup sour cream

Instructions
 

  • Cook rice according to package directions.
  • Brown ground beef with diced onion until cooked through.
  • Add taco seasoning and salsa; simmer briefly.
  • Divide rice among bowls and top with beef.
  • Add lettuce, cheese, tomatoes, and sour cream. Serve.

Notes

Use leftover rice to save time. Store warm components separately from cold toppings for meal prep. Add jalapeƱos for extra heat.
