Ingredients
  

  • 2 ripe bananas
  • 3/4 cup shredded coconut
  • 1 scoop vanilla or white chocolate whey protein (optional)

Instructions
 

  • Mash the bananas in a bowl, then add shredded coconut and whey protein (if using).
  • Mix well, then shape into 11 cookies and place on a parchment-lined baking sheet.
  • Bake at 350°F (175°C) for 15 minutes, then let cool slightly and enjoy.

Notes

Use plant-based protein powder for a vegan version or skip the protein for a simpler cookie. Store at room temperature for 3–4 days or refrigerate for up to a week. Great for breakfast, snacks, or healthy desserts.
