Ingredients
  

  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch
  • 15.25 ounces white or vanilla boxed cake mix
  • 1/3 cup butter, softened
  • 1 tablespoon vegetable oil
  • 2 large eggs, at room temperature
  • green food coloring, gel recommended
  • jumbo red heart candies, for decoration

Instructions
 

  • Preheat oven to 350°F (180°C). Line 2 cookie sheets with parchment paper or silicone mats.
  • In a medium bowl, whisk together powdered sugar and cornstarch. Set aside.
  • In a large mixing bowl, beat together softened butter, vegetable oil, and eggs until well combined.
  • Add the cake mix and stir until combined. The dough will be thick.
  • Stir in green food coloring a few drops at a time until the desired bright green color is reached.
  • Use a small cookie scoop to form dough balls. Drop each into the powdered sugar mixture and roll until coated.
  • Place coated dough balls 2 inches apart on prepared cookie sheets.
  • Bake for 8–10 minutes, rotating sheets halfway through. Cookies should be puffed and soft in the center. Avoid browning the edges.
  • Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • To attach heart candies, make a paste from 1 tablespoon of the sugar-cornstarch mix and 1/2 tablespoon of water. Use a toothpick to apply a dab to the back of each heart and press onto cookies. Allow to set before serving.

Notes

Use gel food coloring for a bright, vibrant green. Don’t overbake or the cookies may lose their color. Store in an airtight container for up to 5 days, or freeze dough balls for up to 3 months. Attach red heart candies with a dab of sugar ‘glue’ for that signature Grinch touch.
