Crockpot Apple Cinnamon Oatmeal

A creamy, hands-off steel-cut oatmeal that cooks overnight with apples and warm spices.

Ingredients
  

  • 1 1/2 cups steel-cut oats
  • 2 cups milk dairy or non-dairy
  • 2 cups water
  • 3 medium apples, cored and diced Honeycrisp, Fuji, or Gala
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3 tbsp brown sugar
  • 1/4 tsp salt

Instructions
 

  • Grease the inside of a 3- to 4-quart crockpot generously with nonstick spray.
  • Add the diced apples to the bottom of the crock, then sprinkle the cinnamon, nutmeg, brown sugar, and salt over them.
  • Pour the steel-cut oats over the apples in an even layer, then pour the milk and water on top. Do not stir.
  • Cover and cook on LOW for 7 to 8 hours, without lifting the lid, until the oats are tender and creamy.
  • Stir well before serving, and add a splash of extra milk if you like it looser.

Notes

Refrigerate up to 5 days or freeze up to 3 months. Reheat with a splash of milk, stovetop or microwave.
