Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 0.75 cup all-purpose flour
  • 0.75 cup water or milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.75 cup buffalo sauce
  • 2 tbsp butter, melted
  • ranch or blue cheese dressing, for serving

Instructions
 

  • Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • Whisk together flour, water, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  • Toss cauliflower florets in the batter until evenly coated.
  • Arrange cauliflower in a single layer on the baking sheet and bake for 20 minutes.
  • Mix buffalo sauce with melted butter. Toss baked cauliflower in the sauce until well coated.
  • Return cauliflower to the oven and bake another 15–20 minutes until crispy and caramelized.
  • Serve hot with ranch or blue cheese dressing.

Notes

Serve immediately for maximum crispiness. Reheat leftovers in a hot oven to restore crunch.
