Ingredients
  

  • 6 slices bacon, chopped
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 3 large russet potatoes, diced
  • 4 cups corn kernels
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 sprigs fresh thyme
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions
 

  • Cook bacon until crispy and set aside.
  • Sauté onion and celery in bacon fat.
  • Add potatoes, broth, corn, and thyme and simmer.
  • Mash some potatoes to thicken.
  • Add cream, season, and heat gently.
  • Top with bacon and serve.

Notes

Mash potatoes to thicken naturally. Do not boil after adding cream. Freezing not recommended.
