Ingredients
  

  • 3 lbs yellow onions, sliced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 0.5 cup dry white wine
  • 8 cups beef broth
  • 3 sprigs fresh thyme
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 french baguette, sliced
  • 2 cups gruyere cheese, shredded

Instructions
 

  • Slowly caramelize onions in butter and olive oil.
  • Deglaze pot with white wine.
  • Add broth, herbs, and simmer.
  • Toast baguette slices.
  • Top soup with bread and cheese and broil.
  • Serve hot.

Notes

Caramelize onions slowly for best flavor. Use oven-safe bowls. Freeze soup base without bread and cheese.
