Ingredients
  

  • 1 cup long-grain white rice (basmati or jasmine)
  • 2 cups water (or chicken broth for extra flavor)
  • 1 tbsp olive oil or butter
  • 1/2 tsp salt
  • 1 lime, juiced and zested
  • 1/3 cup fresh cilantro, finely chopped
  • optional extra lime wedges for serving

Instructions
 

  • Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well.
  • In a medium saucepan, heat olive oil over medium heat. Add rice and sauté 1–2 minutes until lightly toasted and fragrant.
  • Add water (or broth) and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15–18 minutes until liquid is absorbed and rice is tender.
  • Remove from heat and let rice rest, covered, for 5 minutes. Fluff gently with a fork.
  • Stir in lime juice, lime zest, and chopped cilantro until evenly combined.
  • Serve warm, with extra lime wedges on the side if desired.

Notes

For the best texture, use long-grain rice like basmati or jasmine. Let the rice cool for a few minutes before stirring in the cilantro to preserve its bright green color. You can substitute lime juice with lemon juice if needed. Store leftovers in an airtight container for up to 4 days — reheat with a splash of water or broth.
