Ingredients
  

  • 6 fresh peaches, sliced
  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • vanilla ice cream for serving (optional)

Instructions
 

  • Preheat the oven to 375°F.
  • In a large bowl, combine the sliced peaches, blueberries, sugar, lemon juice, vanilla extract, and flour. Toss gently until evenly coated.
  • Transfer the fruit mixture into a 10-inch cast iron skillet and spread into an even layer.
  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt for the topping.
  • Add the cold butter and cut it into the dry ingredients using a pastry cutter or your fingers until coarse crumbs form.
  • Sprinkle the topping evenly over the fruit mixture in the skillet.
  • Bake until the topping is golden brown and the filling is bubbling around the edges, about 45 minutes.
  • Allow the cobbler to cool for several minutes before serving so the filling can set slightly.
  • Scoop into bowls and serve warm with vanilla ice cream if desired.

Notes

Fresh peaches provide the best flavor, but frozen peaches can be used without thawing by increasing the flour slightly to absorb extra moisture. Keep the butter cold for a crisp topping. The fruit mixture can be prepared ahead of time and refrigerated, but add the topping just before baking. Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 5 days. Reheat in the oven to restore crispness.
