Ingredients
  

  • 1 whole grain or everything bagel, sliced
  • 2 tbsp light cream cheese
  • 3 oz sliced turkey breast or smoked salmon
  • 1/4 avocado, sliced
  • 1 handful fresh spinach or arugula
  • 2 slices tomato
  • 6 slices cucumber
  • 2 tbsp thinly sliced red onion
  • 1/2 tsp lemon juice
  • 1/2 tsp everything bagel seasoning
  • salt and black pepper, to taste
  • fresh herbs (dill, chives, or basil), finely chopped

Instructions
 

  • Lightly toast the bagel until just golden on the cut sides.
  • Mix cream cheese with chopped herbs, lemon juice, salt, and pepper.
  • Spread the cream cheese evenly on both halves of the bagel.
  • Layer spinach or arugula on the bottom half, followed by turkey or salmon.
  • Add cucumber, tomato, red onion, and avocado. Season lightly with salt and pepper.
  • Sprinkle with everything bagel seasoning, close the sandwich, and slice if desired.

Notes

For best results, assemble just before eating. Toast the bagel lightly and pat vegetables dry to prevent sogginess.
