Air Fryer Sweet Potato Fries

These air fryer sweet potato fries are crispy on the outside and soft inside, made with just oil, cornstarch and simple spices in 25 minutes.

Ingredients
  

  • 2 large sweet potatoes (about 1.5 lbs), peeled and cut into 1/4-inch sticks
  • 1 tbsp olive oil
  • 1 tbsp cornstarch
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Soak the fries. Place the cut sweet potatoes in a bowl of cold water and soak for 10 minutes to draw out excess starch, then drain and pat completely dry.
  • Coat with cornstarch. Toss the dry sweet potato sticks with the cornstarch until lightly and evenly coated.
  • Add oil and spices. Drizzle with olive oil and toss again, then sprinkle with garlic powder, smoked paprika, salt, and black pepper, tossing to coat.
  • Air fry in batches. Arrange the fries in a single layer in the air fryer basket, without overlapping, working in batches if needed. Air fry at 380°F for 15-18 minutes, shaking the basket halfway through.
  • Check for crispness. Fries are done when they're golden and crisp on the edges; add 2-3 more minutes if you like them extra crispy.
  • Serve immediately. Serve the air fryer sweet potato fries hot, with your favorite dipping sauce on the side.

Notes

Store leftover air fryer sweet potato fries in the fridge for up to 3 days and reheat in the air fryer at 380°F for 3-4 minutes to re-crisp.
